Mine would be scallops panfried in butter with crispy bacon and rocket with a balsamic vinegar dressing and crutsdy bread, then vanilla pannacotta with raspberry coulis, all was down with a glass (or 2) of Oyster Bay Merlot. Plus a bar of Green and Blacks on the side.

And My typing looks like I have already started on the wine .

Takes no time at all. Pan fry bacon cut into bits until crispy, sear scallops in butter, open packet ready washed rocket onto plate, add scallops, top with bacon, drizzle balsamic. Butter bread and eat.

Pannacotta takes a bit longer to make but you can buy ready made at a push

already have the oyster bay merlot! will try for whatever sainsbos have on way up to tube...prob to do wtih pasta - scallops v good idea but not sure how fresh theirs will be so may go for prawns.
