Nut roast, but no leek or onion?

DC have had a lovely lockdown stay-cation with their Dad. I have had a great week cooking (and eating!) meat free meals, but now the carnivores are back... We had a chat tonight and a nut roast seems like a compromise but no onion, leeks and preferably no mushrooms. Does anyone have a go to recipe? TIA

This is my go to recipe. It does have onion but you could leave it out. I found it a bit crumbly, DD is vegan so I add a flax 'egg' but you could use a regular egg if not vegan. I make a Christmassy version with dried cranberries and chestnuts
