Feeding a fussy eater

Following on from my beach dinner picnic thread earlier today, I thought I'd seek ideas from the masses on what the chuffing heck to feed my very fussy 6yo?!

She's always been fussy, whilst her 8yo brother will eat anything, so I don't think it's my parenting. She'll go on and off things too, e.g. Eggs are currently out. So, she'll reliably eat:
Pasta
Cheese. All the cheese (except soft cheese)
Cucumber and cherry tomatoes
Broccoli
Tinned carrots
Sausages
Spaghetti bolognese and most mince dishes
Mashed potato (but not potatoes in any other form)
Gammon
Wraps (but not bread)
Ham
Yoghurt
Pears and soft fruit
Anything salty - so olives, capers etc
Baked chicken
Pizza
Risotto rice (but not normal rice)

It looks a fair amount written down but meal planning is the bane of my life as I'm also gluten and lactose free, and can't eat onion or garlic. Help! Any ideas welcome

Tbh, I don’t think she’s the tricky one to feed; I think it’s harder trying to think of things that would work gluten and lactose free that don’t contain either onions or garlic!
Presumably if she eats mince, cheese and wraps, she’d be Ok with enchiladas. But they’d be your worst nightmare!

Ha! I know I'm a nightmare to feed! She doesn't like things mixing or saucy things so enchiladas didn't go down well annoyingly. It's feeding her in the summer I struggle with as most of the meals she'll reliably eat are winter warmers like cottage pie!

It was a random suggestion given fish wasn’t on your list but it came from the l8ke of mashed potato and capers!
How about skewers? Chicken, cherry toms, haloumi, I find things on sticks go down better!

Sorry, I meant to say the emoji was for her fussiness, not your suggestion! She's a strange one that's for sure. I did halloumi skewers recently and she just ate the halloumi as she won't eat cooked tomatoes or pepper...
