thunderpants - it's fine. if its bicarbonate of soda it's bicarbonate of soda - just check that that's what it is. and it's not bicarb plus bleach or toilet cleaner or some orrible perfume. you can also buy it at the chemists

In case you wanted Nigella's version...
100g caster sugar
4 x 15ml tablespoons golden syrup
1.5 tsp bicarb of soda.
Put sugar and syrup in pan and stir
Place pan on heat. Don't stir. Leave til it is like maple syrup in colour, 3 mins approx.
Off heat whisk in bicarb and turn onto greased foil or reusable baking parchment. Leave till set and then bash it.
That is my summary.
(I have the book if there are any more recipes you want....book is much better than the TV)

I made a batch yesterday which lasted about 20 minutes with MIL and I scarfing it down.
Batch 3 is in the kitchen cooling as I type

Unfortunately it is hurting DH's teeth so it's all for me!

(Batch 1 was horrible disaster, don't let the mix cool down before adding bicarb...it doesn't work!)

Awh Enid and I was convinced that Nigella travels on public transport, can get a seat and can eat messy food on it without getting it on her clothes/face

OH yes, non stick pan, and don't try and rinse it out with anything less than scaldingly hot water either or younwill just set the damn stuff in the pan.

Also, her wonderful method of pouring it on the side to set is bollocks, have just spent half an hour chipping the damn stuff off! Def use baking parchment or foil!

Oh I am a total domestic nightmare, mine looked to have set but was not really the right consistency. It was still quite chewy not melt in the mouth. What did I do wrong?
