Tomato and herb traybake ideas please

Hi all,

Could anyone help me with a traybake recipe for Italian chicken please? My usual sauce has been discontinued so need to have a go at making it myself.

I'm thinking basil, garlic, rosemary and thyme? Preferably something I can just bung into the oven with the raw chicken and leave to simmer, also with lots of sauce to have with mash? Thanks in advance.

Black olives are nice to add. I like capers too. Lots of black pepper. I also sometimes add spinach for the vitamins 😊

Oregano and balsamic vinegar.
