I've seen a few American recipes that call for short ribs. I've not seen this cut in the UK, do you know what an equivalent cut would be here?

To be honest I normally just ask for beef short ribs in my local butcher shop (Ireland). Normally, if you order something using a USA term for the cut they tell you the Irish/UK cut name but they have not given me an different name for short rib.

I’ve had these from Waitrose in the past so must be a UK cut too?

I just ask my butcher for short ribs. Personally I don't like them, they are very gelatinous / fatty even when cooked right down for hours but that's what other people like about them!

DH gets them from the farmers market or the butcher. cook them for a long time in a slow cooker or sous vide and they are delicious.
