Frying fish

May I ask, if you were pan frying lemon sole in breadcrumbs, would you put it in the pan skin side down or the other way round? (Turning half way through). Thanks

Skin side down to start then turn it over and give the uncooked side slightly less time

I agree, always start skin side.
