Vegetarian recipes for fussy eaters

We are trying to cut back on our meat consumption and have introduced more vegetarian meals, but I'm running out of ideas! Does anyone have any great, tasty and not too laborious recipes to suit fussy eaters?
Things DP doesn't like - pulses, mushrooms, aubergine, courgette, peppers, tofu.
Things DS doesn't like - pulses, mushrooms, cabbage/kale.

We like any root veg, eggs, cheese, any grains, spinach, paneer. All like spicy food. I'll eat anything Blush and I'm a good cook but veggie food without those ingredients is testing my patience!

A chilli with beans and or soya mince and tacos
Frittata with whatever veg they like and a large salad
Jacket potatoes with tuna/baked beans and large salad
Lasagne with soya mince and roasted peppers
Roasted Ratatouille but whizz it up to hide the aubergines and courgettes and have it with spaghetti

Would you get away with falafel? I use a combination of chickpeas and BNS and bake.
Stir fry made with bean sprout, carrots, onions, water chestnuts, bamboo shoots, baby corn and cashews. Sauce from soy, ginger, spring onion, sesame oil. Serve with noodles or rice.
Root veg hotpot.
Griddled haloumi
Leek and blue cheese quiche
Root veg tagine with cous cous

Thank you. 🙂 I've never used Soya mince and I'm generally a bit sceptical about meat replacements but can see how it might work in a chilli. Does it have the same texture as mince?
chickadee the pumpkin and coconut curry sounds like something we would all love, do you have a recipe?

Falafels are a big yes for me and DS but not DP. He works late a couple if times a week though so I do cook meals then that he wouldn't like. Never made Falafel normally buy the Cauldron ones, but will definitely try. I've got a recipe for Falafel burgers bookmarked.

We use a fair bit of tofu rather than soya. Just the naked Tofoo one.

Ooh West African peanut stew sounds delicious! I don't really know how to use Tofu tbh. Do I just treat it like paneer?

Indian- vegetable samosas, onion bhajis, basmati rice, vegetable korma (made with just chunky veg or add Quorn pieces), naan
Chinese-Stir fry with egg noodles, bean sprouts, shredded cabbage, carrot, sweet corn and anything else you fancy, served with egg fried rice and mini vegetable spring rolls with sweet and sour sauce.
Mexican- black bean and broccoli enchiladas with salsa, sour cream and cheese or roasted cauliflower and cashew tacos.
Spanish omelettes (potato & onion), you can add spinach as well, with tomato salad
Cottage pie using soya mince instead. Vegetable lasagne with broccoli, leeks, grated carrot, onion, chopped tomatoes and sweetcorn.
Halloumi or paneer burgers, wraps or skewers with shredded iceberg, tomato and relish.
Roasted celeriac or baked beetroot and feta stacks
Goats cheese and cous cous salad
Scrambled eggs on avocado
Pasta with pesto, ricotta, peas, spinach and broccoli

We really like risotto with green peas and a salad alongside, or with roasted butternut squash if that is something you like.

We also like something my mum calls potato scallops - basically, slices of potato in batter, deep fried in very hot oil, and then served with baked beans. It's obviously not health food but it does good.

Lastly, another made-up dish that we like is slices of potato and onion slow fried until caramelized, with fresh parsley and caraway seeds, served with a fried egg on top. Sounds weird but it is really tasty.

@treeeeemendous that looks good. I've seen the Bosh cookbook and lots in it looked great.
@ricekrispie22 we love Spanakopita when we go to Greece so will definitely try the pie!
Loving all of these suggested thank you. Tonight I made a savoury crumble which was delicious and didn't need meat at all.
