Camping meals that don’t require a fridge

We’re camping with no electric next week so for the first time we won’t have our fridge. A couple of days we will shop fresh for meat to bbq but would also like some ideas of things to take that we can keep and cook without needing a fridge. We do have a cool box but not sure if we’ll be able to freeze ice packs on site.

We have a gas hot plate and a cadac with the paella pan as well as the bbq grill

I survive on pot noodle and beans when I go camping so I'm getting some great ideas from this thread

I just came on to ask the same question! We’re going in a camper van so we do have a little fridge but usually we’re in a tent and only for a few days so a week in a camper van is luxury for us!

Love some of these ideas, we’re veggie/vegan so lots of bean and pulse based dishes are on my list so far:

Veg and chickpea tagine (cook veg over campfire for extra flavour - couscous you just pour water over in a Tupperware and close it tightly for 10mins)

Tofu scramble (with veg that can be kept out of the fridge and potatoes)

Stuffed sweet potatoes - cook them in the embers of the fire and stuff with hummus or cheese or bean chilli

Campfire lasagna cooked in a cast iron skillet

Risotto (again with campfire grilled veggies)

Then just taking several tins of tuna and chickpeas for DD to have with plain pasta and carrots pretty much every meal 🙄
