Give me your favourite recipes - veggie and meat

I'm going on mat leave in 2 1/2 weeks time and am really looking forward to having the time to make better, fresh cooked meals, rather than grabbing something from the freezer all the time.

So please give me your favourite recipes(but not too complex!). I would like veggie recipes (for DP) and meat recipes please!

Tuna roll

Dough:
2cups of flour
2 teaspoons of bakingpowder
1/2 teaspoon of salt
1 teaspoon of sugar
1/2 cup grated cheese
1/2 cup of oil
1/2 cup of milk

Mix dry ingredients. Mix oil and milk and add. Mix everything with a knive and roll it out in the form of a rugbyball. about 7mm thick.

Filling:
2 hard boiled eggs chopped up
1 tin of tuna
1 onion chopped up
2 tablespoons of mayo
salt and pepper to taste

Mix everything together. Pour over dough and roll it up like a swizz roll.

Slice the roll (but only 3/4 through)

Bake for 45min at 180degrees celcius till brown.

25g butter
1 onion chopped fine
20ml curry
7ml salt
2ml turmeric
juice of 1 lemon
1kg lean mince
175ml chutney
100ml white wine
50ml apricot jam
100ml milk
2 eggs
100ml fresh breadcrums

fry onion in butter. Add curry, salt and turmeric and stir. Add lemon juice. Add mince and brown.
Add chutney, wine and breadcrubs and stir.

Put everything in flat dish and put apricot jam over it. Mix eggs and milk together and pour over everything.

Bake at 180degrees for 1hour.

It's a south african dish called Bobotie.

my fav at the moment is a new one I tried out and has stuck as a family favorite.

Chilli pasta bake:-

Make up a chilli as normal (mince, onion, celery, red pepper, 300ml beef stock, tin chopped toms, chilli powder, kidney beans)

cook pasta and mix it into the chilli mix.

Pour the mixture into a glass diss and top with:-

2 eggs beaten togther
1 garlic clove crushed
300g greek yoghurt
50 g grated red leicester

Put in the oven for 20 - 25 mins and hey presto! Can be served with garlic bread.

This is a great versatile recipe as you can use low fat yoghurt and it's suitable on a weightloss plan and also when your baby is weaning you can substitute the stock in the chilli with an extra tin of toms and puree it up for dinner
