What to make with full fat coconut milk

I have loads of full fat coconut milk with a short expiry date and I’m short on freezer space. Any good vegetarian recipes to use it up? Thanks

I was going to suggest similar recipe, I like the slimming world coconut and carrot dalh recipe but only use half the quantity of coconut milk.

Im going to try the Ella recipe...thanks

Coconut rice.

2 can coconut milk
100ml water
Veg stick cube
Tin sweetcorn
Tin black beans
1 onion
Half lime zest and juice

Cut the onion into chucks and fry in oil
Add water, stock cube coconut milk being to boil
Drain beans and sweetcorn
Add rice, beans and sweetcorn to the pan
Return to boil, cover and simmer for 10 minutes.
Once cooked stir through the zest and juice.

Absolutely delicious, we usually have it with Jerk Chicken or roasted veg in a Jerk seasoning.

Massaman curry us my favourite, closely followed by rice and peas to serve with whatever jerk flavoured side you fancy.

Make normal oat porridge replacing the milk with coconut milk, then top with mango and brown sugar (and fresh mint if you have it). Lovely breakfast!

I use a rice cooker but this can be done on the hob.

Put rice in the cooker, add coconut milk, top up with water, season and add frozen corn, peas and or baby corn.

And / or tinned kidney beans, lentils, chickpeas.

Thre in some cashew nuts and leave the rice to absorb all the liquid.

AMAZING sticky rice....

400ml coconut milk
150g Jasmin rice
Lots of soy, ginger and garlic.

Add it all to a pot with a tight lid, then put in the oven at 150 ish for about an hour.

Amazing with pretty much anything, but especially stir fried broccoli with sesame oil and cashews.
