CHOCOLATE BROWNIE CAKE
This is not for those trying to lose weight.
I didn't put the full amount of sugar in, I just couldn't.
Haven't tasted it yet and I cooked it for longer than it said.
Serves 6-8.
INGREDIENTS
100g/4oz butter
175g/6oz caster sugar.
75g/2.5oz brown or muscovado sugar.
125g bar chocolate (plain or milk)
1 tbsp golden syrup.
2 eggs
1 tsp vanilla extract or essence
100g/4oz plain flour
1/2 tsp baking powder
2 tbsp cocoa powder.
METHOD
- Heat the oven to 180C/fan 160C/gas4.
- Place the butter, caster sugar, brown sugar, chocolate and golden syrup in a pan and melt gently over a low heat until it is smooth and lump-free.
- Remove the pan from the heat.
- Break the eggs into a bowl and whisk with a fork until light and frothy.
- Add the eggs, vanilla extract/essence, flour, baking powder and cocoa powder to the choc mixture and mix thoroughly.
- Put the mixture into the greased and lined cake tin and place on the middle shelf of the oven. Bake for 25 to 30 minutes.
- Remove and allow to cool for 20 to 30 minutes before cutting into wedges and serving.
- Serve with cream or ice cream and plenty of fresh fruit
