Lovely picnic food

Going on a family picnic soon for a much needed catch up & in need of inspiration to make it that little bit more special, obviously sausage rolls will be included Grin.

I like a nice Spanish omelette - either homemade or Tesco and M&S both do nice ones.
Fancy olives, stuffed peppers, cous cous with roasted veg?

I like these with mozzarella, tomatoes and pesto mayo.

I always take new potatoes too. Smothered with salad cream and really sharp cheddar.

Savoury palmiers
Halved cherry tomatoes scooped out and filled with crab mayo

Chicken skewers with satay/sweet chulli dipping sauce
Cous cous with roasted veg
Yogurt and mint dressing
Lamb koftes
Flat breads
Quiche (though id buy one as I don't like making pastry!)
Rice salad
Potato salad

Ooh how about chicken ceaser salad?
Roast some chicken and fry off the bacon
Pre bake the croutons (i always use ciabatta)
Pre chop up the little gem lettuce
Make sauce and chill it
Pack everything separate and then assemble

Sweet stuff:
Macaroons
Brownies/blondies
Flapjack with chocolate drops

Stuffed vine leaves, feta peppers, homous, homemade scotch eggs, chicken and chorizo sticks and of course cheese and pineapple!

What about one of those lovely big stuffed bread sandwiches - basically slice the top off a loaf and scoop out the middle, then layer up ham, mozarella, salami, vine toms, avocado, marinated peppers, anything you like really. Pop the top back on then wrap it up tight and refrigerate overnight so it kind of sets. Then slice and serve!

PAN BAGNAT that is what it is called.

Oh wow! Thank you for all the ideas, the picnic loaf sounds fab, & how could I have forgotten about cheese & pineapple on sticks! They will definitely be going.

Seems like since the lockdown walks started that a picnic has became throw a sandwich & a drink in a rucksack & off we go.

Now I can take the car & not have to hike up a hill somewhere I'm going to dust off the "doo basket" a proper old fashioned wicker one Smile, fingers crossed for some sunshine now, thanks all.

The tapas type things from the supermarket, I make potato salad and quiche too when I have big family picnics

For a picnic basket picnic you need home made coronation chicken!
But my actual favourite is a flatbread with caramelised onion chutney, figs and Gorgonzola. (Basically a kind of posh pizza!)
