Cantaloupe, prosciutto and burrata (or mozzarella).
Blue cheese, walnut and apple/pear is another favourite. Add pancetta if you want meat but it's great without.
Fig, mozzarella, and green beans. Again, with pancetta or prosciutto if you want meat.
Spicy roasted chickpeas with roasted squash, and pomegranate.
We use a mix of kale, rocket, watercress, spinach, baby leaf, romaine, broccoli etc for our greens so it's never quite the same as it's literally just a combination of whatever we have in the fridge, and we tend to throw a small handful of nuts in at the end.
Homemade ciabatta croutons too. If we want something a bit more substantial then we add a mix of bulgar wheat, buckwheat, and tricolour quinoa.
I really fancy salad now!
