Help... why does my chicken nearly always wrong?!

I mainly do chicken stir frys or fry my chicken and tend to use small breast boneless cubes. My chicken often ends up super hard/chewy, inedible and dry :(. Am I cooking it too long? Using an electric cooker so I do sometimes find it hard to judge the heat. I just want soft moist chicken thats edible!

For stir fries try dusting it with seasoned cornflour first.

Or use chicken thighs which are much tastier and more succulent.

Boil it put it in your wok first and pour boiling water in the wok and cook it for about 5 mins to check cut one piece in half and make sure it's white all the way through. Then do your stir fry and throw it in for a few extra minutes towards the end! Honestly it's a game changer

Sounds like you are cooking it for too long on too low a heat. With small pieces you need to cook it fast in a hot pan so it doesn’t dry out.

What kind of chicken are you buying? As in where from, free range, halal etc?

I'm a total convert to chicken thighs - although I do find they're more faff as I need to trim the fat and sinewy bits first and they can be quite tough to chop up raw (I usually cook whole then slice up)
