Healthish buffet food

Hi all,

Having a girls night with my mum and some friends Saturday, we all need to bring some buffet style food to share, can anyone give me some ideas of what I can cook that isn't too unhealthy but yum! Can be sweet or savoury!

MY friend came for lunch a couple of days ago, it was her birthday but wanted to stick to her diet. We had.

Green salad
Tomato Salad
Crudites with garlic dip (1 tablespoon of Greek style yogurt and one of Mayo with a crushed clove of garlic - you can get low fat both)
Bread sticks
crusty bread
Plate of meats - hams, chicken, tikka, satay chicken
new potatoes
hard boiled eggs

If I was cooking I'd probably do cous cous with pomegranate, chopped peppers and a bit of spice.

Rice cooked in 50/50 water and orange juice - can be eaten hot or cold. I often cook it with a piece of salmon on top of the rice.

Chicken tikka kebabs

pieces of chicken marinaded over night in yogurt and spices, thread on to skewers and grill or bbq.

Stuffed courgettes - use an apple corer and teaspoon to make a 'tunnel' intot he courgette, can be stuffed with veg but I'd probably do some spiced mince - then bake in the oven on their own or in passatta.
Get some dried apricots and soak in water over night. You will find they plump up and have a hole just made for stuffing. I normally stick a bit of brie in and then wrap in streaky bacon - 10 mins n the oven and they are done. You could swap the bacon for panchetta or smoked salmon or even leek. You could stiff with a low fat cheese or chopped peppers.

Chicken and pineapple skewers.
A sweet potato salad
Water melon, feta and mint salad
Crudités with home made salsa and beetroot and horseradish dip

Field mushrooms with the stalk ripped out, drizzled in oil on a tray. Dollop of beetroot hummus or pesto, falafel bite/ball crumbled on top, slice of cheese on top of falafel.
In the oven until cooked through.
Healthy, vegetarian, finger food, looks good and tastier than you'd think.
