1kg of chicken breast to use by tonight!

I have 1kg of chicken breasts in the fridge that need using today. What would you make?

2 adults, 3 teens and an 8 year old 😬

In the oven with garlic, butter, lemons, shallots. Eat with rice and a big chop chop salad (tomatoes, red onions, cucumber, herbs, red chillies, olive oil). Any left over nice for lunch.

Chicken in white wine and mushroom sauce, serve with rice. Freeze any left over to use as a pie with pastry or potato topping.

spanish chicken type tray bake

or a coq au vin type thing:
in an oven proof (or 2) dish marinade the chicken breast in balsamic vinegar, olive oil, crushed garlic, oregano, a couple of slices of onion.
before baking turn the chicken breasts over, sprinkle over brown sugar, fill up with with wine. bake for about half an hour. yum with rice or garlic bread.

Dice & fry off the chicken. Add a chopped onion & soften. In an oven dish make a sauce with 200ml double cream, 200g cream cheese, 2 teaspoons pesto, 1 tablespoon lemon juice. Add in the chicken & onion & mix well. Blitz a head of broccolli or cauliflour & cover the chicken & sauce mix. Top with grated cheese. Cook at 180°c fan/200°c approx 30 mins
