Have done a big shop this week and really need to stretch it. Normally have salmon fillets and salad for example but will Instead make salmon pasta to stretch it out to a few meals. Any other ideas? Stocked up on beans/legumes to bulk up chilli.

Add chickpeas to a chicken curry or a lamb or chicken tagine.
Add lentils to shepherds pie, lasagne or bolognese.

Quiches/frittatas, risottos and fried rice are good for stretching chicken and ham.

Batch cook the chilli and serve it in enchiladas the following day.
Sausage pasta bake or sausage and bean casserole makes sausages go further.

Ok so I've stocked up on following

Chicken fillets
Thin fry steaks
Low fat mince
Chorizo
Salmon

Ideas so far
Stir fry's stretch out salmon fillets
Jamblaya
Chilli - bulk with beans
Almond flour home made nuggets and sweet potato fries
Pasta with chorizo and broccoli

Steaks combine with lots of veg as fajitas
Fritata with chorizo
Salmon into fishcakes
Combine chicken with chickpeas and veg

Basically if you can combine meat with veg to stretch it out!

Bolognaise with the mince - use half mince, half lentils
Chicken fajitas - lots of peppers, onions etc
Salmon and white bean risotto
Use the steak to make stroganoff with lots of chestnut mushrooms and red onions
Chorizo and white bean stew

Next time why not get a whole chicken? Much more economical than buying just the fillets

These are delicious, very cheap and easy to make, Carrot & Sweet Corn Burgers. You just need a tin of sweet corn, 2/3 grated carrots, a chopped onion, some chopped coriander if you have it, 2 veggy Oxos, crumbled, grated root ginger if you have it, 1 tbblspn pumpkin seeds, 2 tsp Garam Masala. Combine all together and then add 80g chickpea flour. Shape into patties and fry. You can vary the ingredients a bit depending on what you have in, but you do need the spice and Oxos in my opinion. They are great cold too!

Live stopped buying chicken fillets, I get the skinless, boneless thighs which are loads cheaper and taste nicer tbh.

Anyways, add chicken and chorizo stew

Chicken

Chorizo

Beans of some sort or lentils

Tin of tomatoes

Peppers and onions if you have them

Seasoning (( chicken stock etc ))

Simmer for an hour and serve with crusty bread and cheese

Add red lentils to a spag bol, use plenty of chopped onion, carrots and celery to bulk it out and make the meat go further

I would totally recommend buying a whole chicken and cutting it in pieces at home (lots of videos on youtube; requires a bit of practice but it’s worth it in the long run).

Once I’ve cut the chicken, I make a soup with the chicken bones, potatoe, carrot and leek. You could either blend the veg and have a creamy type soup, separate the stock and use for cooking, etc.
