Risotto

Hi

I am not a very experienced cook so forgive the ignorance of this question but is it possible to make Risotto using long grain rice?

Ive heard risotto is quite tricky to get right - is that correct?

Does anyone have any good risotto recipes I could have a look at?

I use a BBC Good Food recipe for a smoked haddock and leek risotto which is done in the oven and creme fraiche stirred through at the end. So gorgeous and easy!

I really am a novice at this - in terms of stirring in crème fresh at the end - is it possible to use philadephia cheese instead? Only wondering because im looking at what I have in my fridge.

Yep, I would think Philly cheese would do fine. I'm always adjusting recipe ingredients.

@Bubblebu I definitely need to learn how to attach a link to a website! But in the absence of that knowledge at present just google smoked haddock and leek risotto and it's the first one that comes up,BBC Good Food. I don't see why you couldn't use Philadelphia either
