Jelly help please!

I'm halfway through making a swishy layered fruit n jelly thing to have with evaporated milk poured over, when I had a brainstorm: what if I made the jelly with the evap? Pink stripes and clear stripes!

So after I melted the second block of jelly I topped it up with evap instead of water. It curdled. Looks awful and has a slightly grainy texture. (Tastes heavenly, though!)

Is it worth progressing with? Will it set properly? If it does set, will it be grainy jelly?

And, most importantly, what went wrong? Can it work?

In my DH’s family this is called “jelly fluff” and is considered a delicacy! I think the slight graininess is normal.
