Following. I usually make one up with chicken veg garlic chillies coriander and a couple of sachets of stir sauce - squeezing a lime and scattering some crushed peanuts on top makes a real difference.

Create a huge pan of chicken/veg stock and add soy, ginger, chilli, coriander stalks or leaf, fish sauce.

Simmer for as long as possible to infuse flavours then cook noodles in broth and serve.

Add things such as crispy chilli beef, sliced five spice pork, prawns, chicken or just lots of vegetables.

Serve with soft boiled egg and chilli sauce.

Cold cooked soba (buckwheat) noodles piled up in a nest then dip each bite into mentsuyu (cold seaweed/smoked tuna stock/soup) and eaten with julienned fresh ginger and cucumber. I eat it with chicken wings, baked and sprinkled with shichimi togarashi (japanese pepper mix) And a squeeze of a fresh lime.

Really nice in hot weather with a beer.
You can even find pre-mixed mentsuyu in bottles in East Asian supermarkets.

My neighbour is Nepalese and he made a cracking noodle stir fry. Quite hot and packed with veggies. No idea what it’s called.

I did Gordon Ramsey's pork and prawn meatballs in aromatic broth and added rice noodles to make it more of a meal. Was very easy and a big hit with my lot 😋

This Rick Stein recipe is so simple and brilliant - it's for scallops (which is the best), but I have made it with prawns, chunks of cod, and even firm tofu and it works.
