How do I crisp up sweet potato chips?

Hi everyone

Just needing some tips for perfect crispy sweet potato chips/fries/wedges!

I cut them, zap them in the microwave for a few mins & stick a roasting tin with a little oil in the oven to heat up.

When the microwave finishes -I do 3 mins for enough to serve two adults- dab the condensation off the potatoes then rub a fine dusting of tapioca flour (I think cornflour is similar?) so they are coated but not caked in it then drop them in the roasting tin & give them a shake to coat in oil & sprinkle any seasoning on you want.

Keep your eye on them and turn them a couple of times.

Soak them in cold water once you’ve cut them. It draws the excess starch out which helps them cook through better to be crispy on the outside, tender on the inside without burning. Drain, rinse and pat dry.
Line your baking sheets with foil (dull side up!) AND spritz them with non-stick cooking spray.
Add two large handfuls of them to a very large freezer bag along with 2 teaspoons of cornflour. Shake the bag to get a whisper thin coating of the starch on the potatoes. Don’t add salt.
Empty the bag into a mixing bowl and use your hands to toss with 1 tablespoon of the oil
When you’re baking them, you’re releasing the moisture from them. If you over crowd your baking sheets, the moisture will have no where to go and will sit there steaming around the chips. Keep them spaced out, not touching as much as possible, and absolutely, positively only in a single layer.
