Meals needing longer prep/marinade time?

We have a friend coming for dinner tonight night, but I've got time today to prep. What do you cook that needs time to marinade/set etc? mains & desserts.

Thanks. Never thought of tofu- although its something I rarely use. I've got peri peri chicken in the fridge so far.
