Cheap lasagne recipe and questions about freezing?

Hi..

Have to make a couple of lasagne's for a friends housewarming next tuesday and I was wondering if anyone had a cheap and easy recipe for lasagne (my one is normally r. expensive and takes ages). I still want it to be yummy and not taste cheap!
I would ideally like to make it this friday and freeze it. If I do this how long will it take to defrost?

How come your regular recipe is so expensive? One of the best things about lasagna, I have always thought, is that it's so economical.

mine is a vegetarian one: a layer of wilted spinach mixed with ricotta cheese and nutmeg, a layer of thick tomato and red pepper sauce, a layer of lasagne sheets, 2nd layers of spinach, tomato and lasagne sheets again then cheese on top.Take out of freezer 24 hrs before you cook it.
