Best risotto recipe?

Back at the beginning of lockdown when rice was hard to get hold of, dh came home one day with a packet of arborio rice which I don't usually use. It has sat at the back of the cupboard ever since. Could anyone recommend a good risotto recipe please, one with hearty flavouring. It can't have mushrooms in it as the family are intolerant to them. Thanks.

Easy bake haddock and leek risotto

Heat splash of olive oil and knob of butter over a medium heat in a casserole dish
Add 2 chopped leeks and 200ml boiling water. Cook until leek starting to soften (5 mins or so)
Dissolve 2 veg stock cubes in a litre of boiling water
Add water and 320g arborio into casserole dish
Stir, cover then put into oven at 180 Fan
Cook for 20-25 mins
Add 200g haddock chunks and 30g grated Parmesan
Cook for a further 5 mins
Serve, sprinkled with 30g Parmesan and chopped parsley

you can use risotto rice to make paella too if that helps, a chicken and chorizo paella is nice and hearty.

I tend to make vegetable, but the best ever one IMO was the pumpkin and pancetta with mascarpone that Zizzi used to do. Just fabulous.
