Meals in the hot weather?

Just looking at the forecast for the next few days and I'm wondering what to cook
My kitchen is like a sauna at the best of times, so I'm hoping to avoid having the oven on for long if at all.

What are your go to hot weather meals?
I can only think Salad and bbq at the moment.
We eat most things.

We eat mainly salad and bbq! But bbq does offer lots of options
Griddled halloumi
Marinated salmon fillets
Chicken tikka skewers
Balsamic tuna steaks
Paprika Chicken pitas
All can be bbq or grilled or done in a griddle pan on the hob.

Alternatively you could cook things in oven in the morning when it’s cooler then eat them cold in the evening.
Things like quiche, fritata, roast gammon or chicken, oven baked falafels all work well for this.

Although hot, pasta dishes with various sauces are normally quick to cook, so better in that respect.

A george forman grill is handy for quickly cooking some studded which you would normally use an oven for. I use it for putting in shop brought breaded or battered fish/chicken steaks, or quorn fillets. I recommend those grills or similar as a good investment.

I've made a mushroom leek and prawn frittata for our tea today and DH can take the leftovers for lunch tomorrow. What a good little wife I am. 😁

Only cooking time was sweating off the mushrooms and leeks on the hob then browning the top off briefly under the grill.

I'm cooking salmon and broccoli first thing tomorrow so we can have it with a salad in the evening.
Will do the same on Wednesday with some chicken in sweet chilli sauce.
We don't really want big meals when it's as warm as it is now. Something and salad does us just fine.

My fave is cooled poached salmon with hollandaise sauce, together with baby herbed potatoes and a bit of salad. Yummmmmmy!

Pasta salad. Fusilli, olive oil, mayonnaise, grated gherkins and pancetta. Whole grain mustard or capers too, if you want.

Chicken Caesar salad and Salade Niçoise are favourites here.

Also chilled soups, gazpacho (no cooking) borscht, vichyssoise, Greek egg & lemon or cucumber & yoghurt with mint (no cooking).

Pasta, rice or cous-cous or lentil/mixed bean salads with fish, quiche, are quick and substantial.

When it gets very hot I'm more than happy with a plate of ripe and juicy tomatoes with rocket, oregano, red onion, extra V olive oil and salt flakes.
A couple of slices of lightly toasted sourdough and homemade tzatziki on the side.

Now that I've thought about it, I'm def going to have it this week!

That is for all the yum ideas
I've been shopping and bought stuff for the tuna burgers, Greek salad, caesar salad.
Also got a peri peri chicken
Going to roast that when I get up for work tomorrow and get DH to pop it in the fridge.
Will have that with salad and cous cous maybe.

For tonight I bought some chilled chicken tikka and serving that on a naan bread with loads of salad and mint yoghurt.

We do a whole chicken stuffed with lemons in the slow cooker, and then serve it up with a salad. Really nice and refreshing in the hotter weather.
