Ideas to use up aduki beans please

I've found a packet of dried aduki beans at the back of the cupboard. Can't remember the last time I used aduki beans - could have been 20 years ago, probably in a Rose Elliott dish. I know the basics of how to soak and cook them, but does anyone have a good recipe where aduki beans are the main ingredient or play a strong supporting role? Thanks!

Grin @BillywilliamV, no, it's an unopened packet. I have no idea why I bought them now. I have a bad habit of seeing a recipe, thinking 'Oh yes, that looks good', buying an unusual ingredient and then forgetting all about the original idea. I'm not going to admit to the use by date on these as it would send some MNers into a fit of the vapours, but I think they'll be fine once cooked - obviously I'll taste them before inflicting them on the rest of the household! I think of drying as sending them into a state of suspended animation and soaking or just cooking will re-animate them.

Red bean ice cream! Gosh. Not sure my less adventurous household members would be keen, but I'll search the recipe out, thanks @boatyardblues.

Bean burgers. I have a tin I bought years a while ago but I never found the recipe i was looking for which was a photocopy of a page from my university house mate's recipe book. All I remember is that you mashed half of the beans and left the rest whole - but the result was on a par with a Burger King bean burger.
