Does anyone have a reliable one? Preferably not deep fried? Mine are always too dry.

Buy jarred chickpeas. Any type of bean in a jar has generally had more attention paid to it. Tried loads of times with tinned and they just end up crumbly.

Could you brown in a little oil then bake?

I make these all the time and they always turn out beautifully. I use tinned chickpeas and they stick together, are moist and delicious.
