What can I do with a smallish piece of leftover roast pork?

To feed 3/4, bearing in mind that everyone has a proper hot lunch at work/school so we don't need a specifically meaty dish, IYSWIM.

I need to prepare it in advance too, as I'm out from 5-7pm.

Any brilliant ideas? My mind is blank...

You could chop it up and use it into a risotto.

Or maybe do a casserole - something like sausages, bacon and mushrooms with some onion, garlic and a tin of chopped tomatoes and just sling the chopped pork up in there with it.

Or use it instead of ham to make a pasta sauce a bit like the one with ham in it, the name of which escapes me at the moment but you know the one I mean ... oh, what is it ... you know, has mushrooms, ham and cream in it.

dice it and do fajitas with salad? YOu can always do some spicy beans wtih it to bulk it out if not enough.

IS carbonara the thing you are thinking of WWB?

Stir fry...bulked out with veg.

cut it/shred it into small pieces.
saute onions
add a tin of chopped toms
possibly some sliced red peppers or courgette etc, if available.
salt
pepper
bit of thyme
maybe a tsp of flour to help with thickening
allow to simmer down
add a small bunch of coriander in the last minute or 2.
(hotsauce to taste)

put in a bowl in the middle of the table with a tablespoon

have everyone make their own tortilla wraps with it.

yum.

dice and add to an otherwise veg curry. IMO a coconut milk sauce better than tomatoey one with pork. Curry isoften better for being left to infuse into the meat, bung in a bit of extra garam masala when you reheat.

Ah you're all brilliant!

I've got some bacon bits and creme fraiche that need using too and some tortilla wraps - so a few peppers, a tin of tomatoes and a green salad later and we're sorted.
