Not a casserole exactly, but an all in one tray bake:

Sausages (we use chipolatas) peppers, red onion, cherry tomatoes, mild piquante peppers from a jar and gnocchi in a baking tray or dish.
Pop in the oven for around 40 minutes. The veg gets roasted and the gnocchi goes all crispy like tiny roast potatoes.

I make cassoulet with sausages on the top - it’s much nicer.

1 shove your sausages on a baking tray and pop them in the oven.

  1. Fry onion, celery, carrot and lots of thyme and garlic together until browned
  2. Add in cannellini and butter beans, and give them a stir round to soak up all the flavours
  3. Add in a chicken stockpot, a mug of water, a carton of pasatta and a tablespoon of tomato purée, plus lots of black pepper, and a very generous dash of Worcestershire sauce.
  4. Simmer for about 20 mins
  5. Serve with mash and the sausages on top, or if you prefer, you can pop in halved new potatoes at the same time as you add the beans and then just not bother with the mash.

Nigel Slater one:

  • cut 2 onions into wedges, finely slice 2 garlic cloves. Fry until translucent. Meanwhile, grill sausages, 2 per person.
  • once onion and garlic are done, add salami, no idea re weight, about 6-8 inches cut into fat matchsticks. Cook for couple of mins.
  • wash then add some green lentils. Zhoosh about for a mo then add a carton of passata. Fill carton half full of water and add that too.
  • put sausages in and push into sauce. Add 2 bay leaves and season. Simmer for 30 mins ish.

Star Wars Stew! (A recipe from Blue Peter in the 70s)

Parboil potatoes and carrots
Cook sausages in the oven.
Add tonnes tomatoes, a ton of beans and a tin of sweet corn to the potatoes and carrots with some Worcestershire sauce, mixed herbs and salt and pepper. When the sausages are cooked, cut up and add. Cook the whole lot in the oven (may need to add water so it doesn't dry out).

Not haute cuisine but a firm family favourite here.

I do like in the slow cooker
Brown sausages
Put a tin of toms, tin of beans-any, chopped onion into slow cooker
Add sausages
Add mixed herbs, smoked paprika and bay leaves and a squirt of tomato purée (also a bit of garlic if you fancy).
On high 4 hours.

We use a modified Hugh Fearnley W recipe.

  • Cook sausgaes first in oven (6 usually)
  • Fry some onions, garlic in an oven proof pan
  • when they're soft add kidney beans, canellini beans and baked beans plus a can of tomatoes (or two if there are >6 sausages) and a tablespoon of mixed herbs. Add half a can of water ish.
  • when sausages are cooked chop them into chunks and add
  • put the whole lot into the oven on 150 for about an hour - 90 mins. Check occasionally to make sure it's not dried out. Add water if it has.

We serve with whatever we have in - crusty bread, garlic bread and green veg go well.

Also, google the Hello Fresh sausage pie for an amazing (if a little time consuming) meal. We bought a meal pack to start with but the recipe is a winner in our house, especially with the roasted broccoli :)

I use a recipe from an old Good Housekeeping cookbook. It's pretty much like ones above but the sauce is thickened with flour. Also has smoked paprika in it.

It's not really a casserole recipe but you could add some more veggies if you wanted, from Nigella bites:

Dice a large onion and sauté until golden and translucent, add 2 whole garlic cloves 1 minute before the end. Brown all sides of sausages, add onions and garlic, add some thyme, 1 cup of chicken stock, 1 cup of white wine, cover and simmer on medium to low for 20 minutes. I usually serve this with puy lentils as they soak up the delicious gravy and some veg on the side.
