In the last week or so we've had
Cajun chicken breasts roasted with aubergine, courgette, peppers and mushrooms tossed in Cajun spices.
Chicken gyros - chicken thigh fillets marinated in yoghurt, lemon, garlic, oregano and olive oil then bbq'd - sliced thinly and then stuffed into flatbreads with homemade tzatiki, beef tomatoes and red onion.
Soy and ginger salmon fillets with stir fried veggies and rice noodles
Poached eggs, baked beans and potato waffles. Love this dinner - used to have it as a child and makes me feel all warm and comfortable! Usually our post swimming lesson meal but nice and simple for when we've had a busy day now too!
Homemade houmous, salami, cheese, pickles and veggie antipasti with bread and chutneys (and plenty of red wine) - currently our Friday night favourite 'dinner' So easy and feels like a treat.
Breaded fish fillets, broccoli, corn and French fries
