I'm looking for some inspiration for some different, interesting salads for lunch?

I love nuts, olives, most cheeses, etc. Don't fancy fruit in a salad. Vegetarian, not fussy.

Mixed bean salad: (butter, kidney, etc), chopped and sliced red onion, lettuce, green beans (blanched), grated carrot and garlicky French dressing. Healthy, substantial, cheap and delicious (I think anyway lol).

We eat quite a few salads because it is one of my favourite foods. Anything can become a salad and they can even be warm.

A few of my family favourites:

  • Salade Nicoise (I blaspheme by using seared tuna instead of tinned tuna)
  • Greek salads (younger DS's favourite)
  • Frisee with lardons, fried egg, and olive oil croutons
  • Thai style beef salad
  • Napa cabbage salad with chicken and grated veg and sesame dressing
  • crunchy greens salad with broccoli, mange tout, sugar snap peas, caramelised shallots, and thinly sliced fennel

Ottolhengi's cookbooks are full of great israeli influenced salads
