What can I do with cannellini beans?

I absentmindedly opened a can of cannellini beans tonight (meant to open a tin of soupHmm) They were a substitution in tesco order ages ago and I didn't know what to do with them so they have been sitting in my cupboard unopened for months as it is. Now they are sitting in a bowl in the fridge but I will have to eat them or bin them tomorrow. I've done a quick Google for recipes but they mainly seem to be for salads or hummus but my children aren't big fans of cold food. Can anyone suggest any recipes for using them hot please?

Put them in a chilli or tomato pasta sauce?

mrsfeatherbottom · 04/06/2020 20:33

Minestrone soup. I use a Jamie recipe.

Chicken breasts/ white fish , kale or spinach with chorizo if you have it
Make a regular type thing with rubbed or roughly chopped tomatoes, garlic,, olive oil
Add the beans and cook for a while
Fry fish or chicken or pinch
Sautéed spinach
Pour bean / sauce thing on
Plonk protein on top

They will keep for upto 5 days.

You can make a hummous with them, or a dip. Or just add to soup.

Smellbellina · 04/06/2020 20:38

Add to tuna with red onion, lemon, olive oil and parsley

Oops sorry just reread your OP!

Cook with olive oil, rosemary and garlic and blend.

Put in chilli instead of kidney beans

You can roast them in the oven. Delicious.

Spanish bean and chorizo stew?

TimeWastingButFun · 04/06/2020 20:44

You can make a lovely accompaniment to other dishes by cooking shallots and garlic in butter till soft, then put the beans in, warm them up (add a little white wine if dry) mash them roughly and add some chopped coriander before serving, maybe a squeeze of lemon? Nice to have with pork, chicken, steak - anything.

VaTeLaverLesMains · 04/06/2020 20:46

I chuck them in a beef stew, or you could make Boston beans which is homemade baked beans with ham bits in the slow cooker.

Egghead68 · 04/06/2020 20:49

I second or third mashing them roughly with lots of softened onions and garlic. Nice with roasted peppers and fried halloumi marinated in oil, smoked paprika
and cumin.

Gently fry a chopped onion & some garlic, add the beans and warm through. Serve instead of potatoes with anything, sausages, chops, gammon etc etc.
Add to any soup, bought or homemade.
Add to any casserole or stew.
Add passata or chopped tomatoes and serve hot on toast.

Tuscan bean soup

InterestingIris · 04/06/2020 21:04

Jack Monroe uses them a lot.

There’s a really nice dish with cannellini beans, leeks and mozzarella I would recommend, worth a look at her website.

Nope that didn’t sound right - it’s this one I’ve tried and it’s really quite good.

Thanks all - I wasn't expecting so many responses!
I will have a look at all these. Thanks for letting me know that they will last beyond tomorrow DartmoorChef

Spanish bean and chorizo stew?

This is what we had for tea tonight, it's such a great store cupboard meal. Recipe here, it's a slow cooker recipe but on the stove top simmer for an hour. Gorgeous. If we don't have cannillini beans I substitute a tin of sweetcorn.

TheSandgroper · 05/06/2020 12:02

Nigella has a recipe in Feast where she roasts lamb low, slow, covered with loads of the usual vegetables and she tips in a ton of drained beans.

It’s to die for.

FawnDrench · 05/06/2020 19:34

You can also use them in cakes - like this lemon one
