Polenta - what do I do?

I bought a box of polenta in a strange moment of lockdown madness. I've eaten it before in restaurants and really liked it, but I suddenly can't think how it's usually served.

Does anyone have nice recipes?

BBC good food have a recipe for lovely cottage cheese and polenta dumplings, it sounds awful but is actually delicous.

Polenta is usually served with ragu. Jamie has a recipe for beef shin ragu with polenta, but I usually make the BBC Good Food recipe which uses sausages.

It works well in cakes too. I’ve seen lots of recipes for polenta and orange cake.

Cook it in a saucepan with stock, stirring all the time to avoid lumps. Add chilli flakes and rosemary and Parmesan. Pour into a tin and put in the fridge to solidify. Cut into strips then fry in olive oil til crispy. Nice with a sauce made out of tomatoes and garlic.

I used this recipe for polenta with a mushroom ragout recently. I didn't include the taleggio topping, we had extra grated parmesan on it. I think it needs a bit more liquid in the polenta. It's very tasty!
