Interesting Salads

It's my sister's birthday on Sunday- I thought I would make her something edible so she doesn't have to cook - as restaurants are all closed. In view of the anticipated nice weather she says she would like an interesting salad . I thought i would make her two or three to try. The only thing she doesn't really like is coconut. One I will make is Jamie's sexy fig salad - she can pop it in the oven when she wants it. Any interesting salad recipes that you would recommend - with the likes of feta, halloumi, pomegranate, sumac, avocado or anything else.

One of the most delicious summery salads I make is smoked salmon and beetroot

Let's just say I do not use this recipe to the line. It has vodka and horseradish in it Grin. But maybe one for if you're feeling brave?

I just make a salad and throw in shop bought beetroot, onion, torn up smoked salmon, a squeeze of lemon. Yummy.

Look up Sabrina Ghayour - delicious Middle Eastern stuff

A fattoush? All the salad, torn up hot pita bread dressed with a dried mint, garlic, lemon, olive oil and sumac dressing. Add fresh mint and coriander too.

I often do a ‘pantry’ rice salad. Adding dried fruit, toasted nuts, date molasses with dressing above. Nice with feta mixed through and LOADS of fresh herbs (parsley, mint, coriander)

Ottolenghi is my go to for salads. There are loads on his website. I made the cauliflower, pomegranate and pistachio one at the weekend and it went down really well. I also really like the kohlrabi, apple and beetroot salad.

My favourite salad at the moment is cooked and cooled noodles, prawns, diced mango, thin strips of cucumber and carrot dressed with coriander, soy sauce and lime juice. It’s lovely and refreshing.

I made a coleslaw yesterday - onion, red cabbage, carrots, all shredded, vinegar, mayonaise, salt, black pepper, tiny bit of sugar. Then I thought, what else could I add to really make it zing? Two finely chopped red chillis, 2 teaspoons tartare sauce, around 100g of grated mature cheddar.
That worked well.

We love a roasted sweet potato, spinach and feta salad topped off with pine nut (we prefer pumpkin) seeds and dressed with a balsamic vinaigrette.

andyoldlabour - I love coleslaw. Had burgers for lunch today and fancied a coleslaw but didn't have cabbage. I shredded carrots, added thin strips of apple and added mayonaise with sugar, vinegar, lemon juice. It just lifted the meal and reminded me that improv can be a great thing.

I make Waldorf salad, walnuts, red grapes, celery and apple on a base of crisp lettuce, I usually add flaked smoked mackerel and a mayonnaise or yoghurt dressing, but it would be just as nice with diced feta.

Another favourite is Salade Niçoise, with lettuce, cooked green beans and new potatoes, tomatoes, hard boiled eggs and tinned tuna, with a vinaigrette dressing and mayonnaise on the side if you like it.

It’s quite a substantial salad. If you don’t like tuna, it works well with mozzarella instead.

There is a brilliant book called “naturally nourished” which is a vegan cook book and it has the most delicious salads.

There is a really good salad which is basically
Shredded cabbage- red and green
Shredded carrots
Chopped up coriander
Sliced up cucumbers
Sliced radishes
Cooled broccoli florets sugar snaps

Then the dressing is all this whizzed up in a blender
Lime juice
Tahini
Grated ginger
Soy sauce
Little bit of chilli
Tiny bit of water to thin
Salt and pepper

The arrange all the shredded veg in a bowl and dress. Then top with toasted sesame seeds.
