Ok you won't be disappointed. This one is a meal in it's own right.
Red cabbage coleslaw
Thinly slice half a medium-sized red cabbage
Peel and grate 3 large carrots
Slice half a red onion( I'm not keen on raw onion so usually leave this out)
Peel, core and finely chop 4 red apples
Place all the above in a large bowl.
Add a large handful of unsalted peanuts. (I usually break them up a bit)
Add a large handful of raisins
Season with salt and pepper
Squeeze the juice of a fresh lemon over the contents of the bowl
Finally stir in a small jar of Hellmans mayonnaise. Enjoy!!
