Is there any way to avoid it either going rockhard or soggy in no time flat?

Are those breadbags that places like Lakeland sell any good?

not quite the answer I was looking for though

I wrap my HM bread in cloth for about an hour them=n in tupperware

The breadbags go mouldy very quickly, IME. I wrap mine in kitchen foil, cling film, or freeze it.
