Annabel Karmel recipe for toddler chicken and red/green pepper casserole please

DS loves this dish but I've gone and lost the recipe book amid our kitchen overhaul! I know it's got chicken, red/ yellow peppers, onions, tomatoes and stock and it cooks in the oven for a bit but I can't remember the specifics. Could anyone have a look in thier AK book and help me out? thanks

is it chicken casserole with tomatoes and peppers?

Anyway, here goes:

6 skinned chicken breasts on the bone
plain flour
salt and pepper
cooking oil
2 onions, peeled and finely sliced
2 sweet peppers (red, yellow or green) seeded and finely sliced
200g tin of tomatoes
2 chicken stock cubes dissolved in 175ml water
1 tablespoon chopped parsley
1 bay leaf
450g button mushrooms, carefully washed

preheat oven to 180C/350F/gas 4. Roll the chicken breasts in the seasoned flour and fry them, turning frequently, in a little oil until golden. Meanwhile, fry the onion in a little oil until soft, then add the chopped peppers and continue to fry for another 3 mins. Pat off any excess fat from the cooked chicken with kitchen roll and drain off excess oil from onions/peppers.

Drain off the tomato juice and chop tomatoes into pieces. PUt the chicken in a large casserole dish with the onion, peppers, tomatoes, chicken stock herbs and seasoning. put in preheated oven for 30 mins, add mushrooms and cook for a further 30 mins.
