Easy soups

Morning

I wondered if anyone would share their easy soup recipes/ideas?

My kids adore soup and for us it's been the easiest lunch during lockdown.

We love: carrot soup (or any root veg soup), tomato soup and lentil soup...

Any other family favourites out there I can try?

We really like a chicken chowder, which I normally make with the leftover bits from a roast chicken (if any!). I add broccoli and sweet corn, sometimes bacon if I have it, leeks or cubed potato. Very satisfying.

Celery soup is lovely.
Head of celery. A potato and an onion.
Mixed herbs and veg stock.
Sweat down chopped veg and then add stock etc.
Wizz up and serve.

Curried carrot soup

Carrot
Red lentils
Onion
Cumin

Whizzed up. The lentils make it quite a think consistency.

Peel and chop a butternut squash. Fry a chopped onion until translucent, add a sliced clove of garlic and a tsp of both ground cumin and coriander. Zhoosh in the oil for 2 mins. Chuck in squash, mix, add stock - not too much, maybe a couple of pints. Simmer till squash is soft. Blitz with hand blender until smooth. Adjust spices, season as needed, add more water/stock if needed to thin.

I do Roscoe’s butternut squash soup above only with a bag of frozen squash and a roughly chopped red onion chucked in the oven. Very easy.

Fry some onions until soft. Add diced potatoes then cauliflower florets and boil with a chicken stock cube until the veg is soft. Season with lots of black pepper and blitz with a hand food processor. Sprinkle with grated cheese (any hard cheese will do) and served with warm chunky white rolls.

Aldi Soup

Onions as a base everytime (although leeks can be used if they are one of the Aldi 5)

Carrots are usually in there somewhere but not essential.

Whatever Aldi, Lidl or whoever has on offer (or whatever you can get cheaply from a farm shop or market)

Fry the onions until translucent, add the rest finely sliced or chopped and cook for half an hour or so

blitz - either until the whole lot is smooth or until half is.

Posh soup - involves chopping up the best bits of this into bite size pieces and roasting them rather than cooking them in the soup. Blitzing the soup until smooth and then add the roasted bits.

Add stock or stock cubes with the water.

Can add garlic with the onions

Can fry some herbs and spices before you add the onions - or sprinkled over the the roasting veg.

I keep it very thick and freeze then add water, milk, wine or whatever when reheating.
