What type of cake shall I make?

It is my birthday on Sunday and am going to make myself a delicious birthday cake as a treat but I cannot think what type to make. A Victoria sponge? Lemon drizzle?

Does anyone have a good recipe? There are only three of us to eat it and none of us like chocolate cake that much but will eat anything else! I have pretty much all of the baking paraphernalia so can do most things.

My late mother always made Sandkuchen for my DH as it was his favourite. Her recipe is very similar, I have it written in her cookbook which she learned and wrote down under instruction from german nuns in the early 50s. This memory jog really makes my happy. And it's my DHs birhday soon. Cake sorted, thank you.

Happy Birthday!!! It really depends what you do/don't like. I was going to suggest a chocolate mud cake, but not much good if you don't like chocolate- hehehe.

  • If the weather is sunny, you might want something different like a pavlova- basic meringue base, cream and any fruit you can get (strawberries, kiwi, passionfruit etc)
  • If you like slightly exotic flavours, I love coffee and cardamom cake with walnuts in it
  • Cheesecake
  • Carrot cake
  • If you have a lot of time, a mini- croquembouche, made with profiteroles and formed into a cone with toffee sugar, or any shape. I made one in the shape of the number 5 for a birthday once.

I was hoping to make the mojito cake from the BBC Good Food website - it’s quite limey with a bit of a rum kick Cake. Hopefully I’ll be able to get all the ingredients.

I made Peach Melba Squares this week which were declared the best cake I've ever made by the family. It isn't a 'wow' cake to look at but it's really, really delicious.

NoFlora glad to have helped, that's a very cool legacy having recipes from German nuns!

All these sound delicious and might end up making most of them slowly over lockdown despite diet! I do love a good cheesecake and pavlova but somehow want a cakey cake so will save those for the time when my sister can finally come over.

Our go to here is my grandmothers date and walnut loaf cake - we prefer it for an everyday bake as its sweet but not confectionary type sweet like a buttercream cake) and works well as a snack/with tea/on the go.

Otherwise carrot and orange, for similar reasons.

They always get finished but the birthday cake types never do.
