"Rainbow" recipe ideas for kids?

You know how we see rainbows for the NHS and key workers? Well I'm looking for ideas for a baking project with this theme.
I'm looking for rainbow recipes suitable for kids, any ideas? So far I have things like minestrone soup, frozen layers of yoghurt and berries, buns with colourful swirly icing etc. It would have to be fairly simple.
I've seen some gorgeous layered rainbow cakes with each layer dyed with food colouring and iced with white buttercream but that might be a bit complicated and ambitious!

I’ve seen a lovely rainbow flatbread thing with the colours coming from different ingredients laid on top (purple onions /red yellow and orange tomatoes/Green red yellow orange peppers)

Rainbow biscuits are quite easy, I use this recipe: usbornepublishing.tumblr.com/post/126500863130/the-little-usborne-bake-off-lemon-spiral
But make a little of each colour (you need slightly more of the colours on the outside and slightly less of the colours on the inside but I have always just guessed) then put them together into a big sausage cut into circles then cut in half. Then bake.

(You can also make cross section of the earth biscuits (they're educational).

We made a rice krispies rainbow - didnt follow a recipe (just melted white choc with golden syrup and split into 5 bowls - food colouring then add the krispies - DD loved stirring up all the different bowls then we squashed it together on a tray into a rainbow shape and set in the fridge. Cut into slices for eating over a couple of days.
