Roasted Veg Help please

Hi all, I have a tray of roasted med get from Aldi to use up. What can I put in it/with it to make it a bit more exciting please. Thanks in advance.

Pesto! Once it’s cooked stir some (preferably fresh) pesto through it.

Having this tonight with Italian chicken and cous cous

Probably too late now but we stir roasted veg into couscous and top with feta or goats cheese.

I also sometimes turn it into "red pesto". It's nothing like pesto, but it convinces DD to eat it - after they're cooked, add some cream cheese/creme fraiche and blitz it all to a paste. I sometimes add some walnuts if I have them around too. This works as a nice pasta sauce and freezes well too.
