What can I do with my leek tops?

Hi, I've had a few delivery of lovely leeks and they all come with very long green bits. They look so fresh I can't bear to discard them. What can I cook with them?

I’d use them along with other stuff to make a vegetable stock. They’ll probably be quite tough to eat.

I'd rather not bin them, thanks. Yesterday I shredded some leek tops and cabbage and cooked them in a bit of butter and they tasted nice, so I don't think they need binning. I might try a leek and potato soup today. The stir fry idea is good too, I hadn't thought about it.

I don’t understand the question to be honest, but MN is full of surprises. I’ve always used the whole leek and I don’t know why anyone would throw the green parts away. I use them as I’d use the whites. The green part is especially good in leek & potato soup.

Creamed leaks are fab, saute down in butter until tender, add a spoonful of flour cook for a few minutes, add milk to make a, sauce season well with salt pepper and lots of nutmeg.

I love the idea of creamed leeks! I've never cooked them like that - I'll try them this week.

I use the whole thing unless green ends are dry or tough.

Agree, I also use all the leek that's not tough. Which usually is 95% of it! Are people really only eating the white of the leeks?

I also use the non-tough green bit in the same way I use the white. The tougher green leaves I use for stock

Cooking them down with butter and a swig if sherry,then making the cream sauce is delicious.

I pop them into Greek Spanakopita and treat them as spring (green) onions.

Just wash them well and cook them with the rest of the leek.

If you don't want the greenness in yiur normal leek dishes , they're nice in a stir fry.

Same as pp’s, I’ve always used the whole thing - I didn’t know you weren’t ‘supposed’ to!

We had cauliflower, broccoli and leek cheese bake yesterday, it’s one of the top hits in this house.
