Inspired by the macaroni cheese thread to post this - often a staple of buffets in the Caribbean - delish! If you like mac/cheese I’m sure you’ll like this. Brilliant for a buffet with cold meat, salad, a side dish with a barbecue, etc.
400g macaroni or penne (dry weight) cooked and drained
400g really good strong Cheddar, grated
1/2 litre milk or just under
3 large eggs
Salt, pepper, English mustard
Preheat oven to 180C, 160 fan and butter a large shallow baking dish.
Beat eggs and milk together, add salt and pepper and a good tsp of English mustard.
Mix grated cheese with the past while pasta is still hot, then add milk/egg mixture, mix very well.
Pour into greased dish, bake in oven for about an hour. If the top begins to brown too quickly, cover with a piece of foil.
Allow to rest for 15 mins before serving. This can be cut into squares to serve. V. nice hot or at room temp, can also be reheated next day - if you have any left!
