Scones any tips?

I'm making fruit scones for the first time tomorrow. Going to try Mary Berry's recipe. Never tried them before. Had a disaster at cheese scones as a student years and years ago. Any tips or words of advice? They need to work for our afternoon tea on Friday!

Don’t roll them too thin!

Use cold butter. Rub in with the tips of your fingers, not your palms (or use a food processor). Pat the dough out rather than roll and keep it thick.

Very easy recipe on BBC website....made them for the first time last week and they were perfect! Agree with the above tips....don't cut too thin and use finger tips for butter..

100% totally not what you want but in case of emergency...
If you hit morrisons at approx 17:00 you can often pick up packs of scones for 5p a pack in the reduced bit (including morrisons the best range)

If you use cutters, do not twist them!

After you cut the scones out of the dough, turn them upside down on baking tray (they'll rise straighter).

lemonade scones

3 cups SR flour, 1 cup double cream, 1 cup lemonade ...any cup/container will do.

Put it all in a bowl and mix it with a knife, bring it together gently to a ball of dough and pat out about the thickness of a cutter and be gentle as you re roll to use the cuttings.
Don't go near scone dough with a rolling pin, it's really not necessary

Bake in a hot oven

You can add the following to the flour as you please
a quarter cup of icing sugar if you like them sweet
handful of sultanas/raisins/cherries
half cup of grated cheese ( hard cheese finely grated)
fresh or dried herbs
those bacon bits are nice with cheese!

this recipe works perfectly. Make them same day you want to share them, they are really quick.

Virtually no handling of the dough, just a quick pat out, shove your glass in.

Do not touch too much (at all if you can help it!)
Do not twist the cutter as you stamp out rounds
Bake them HOT
Cut them high

I’m making scones on Friday and am going to use the bbc recipe. I’m quite looking forward to it as I’ll be making Mary Berry’s banana loaf too.

Add the fluid cautiously, you want it soft but not over wet and sticky.
Don’t overwork the dough. Pull it together into one lump lightly in the bowl with your fingers or a knife, then onto a lightly floured surface. Don’t knead it, just gently pat out to a good thickness. Try to get as many scones cut from the first roll as possible, then gather leftover dough for second cutting.

Thank you for all your tips, they are amazing and exactly what I was after. Worried I've picked a really warm day to try, everything is too hot already in my kitchen!
