I've decided that the easiest way to be an amazing baker is to have a handful of easy recipes that you can make really well, rather being good at loads of different things! The next thing I need to master is a good chocolate cake - nice & rich & moist.

Does anyone have a recipe for the best chocolate cake ever?

This is my go-to chocolate cake recipe. I never make another one! Make sure you use good quality dark chocolate like Lindt 75% or more.

Oh, and just to add - always weigh your ingredients. Makes a big difference!

I use this one, and it is lovely. The measurements are in cups so you might need to use an online converter x

Try bbcgoodfood.com, search for ultimate chocolate cake by Angela Nielson. It's absolutely gorgeous. I split it between 3 cake tins rather than using a deep one & trying to cut it later😊.
Bake for approx 40 mins, or until a skewer comes out clean. I also cut out 100g of sugar & just use whole milk instead of buttermilk.

Sorry, forgot to say if you weigh out the mixture between the tins they bake at the same rate & you get even layers.

My DH always asks for it on his birthday

Right, today's the day for the ultimate chocolate cake! I managed to get all the ingredients except muscovado sugar, so I'll improvise with other sugar.

You are making the recipie I was going to suggest. I've used various types of brown sugar in it, and often "make" butter milk by adding some lemon juice to the milk.
We find it better on day 2 - the top is often crunchy on first serving, but softens overnight.

It's delicious! Very very rich!
My only comments would be:
-as @CoffeeBeansGalore says, do it in separate tins - I didn't and then chickened out of slicing the cake into 3 - I just did 2.
-Wait until the cake is really cold before attempting to put the ganache on.
-The ganache is really rich - don't put it on too thick or you might start feeling queasy.
-I think I'll use decaff coffee next time as DC are quite small.
-It's actually a really simple recipe to make - I didn't even bother getting the food mixer out.

@KedsAndTubeSocks Tomorrow it will be lovely as a pudding if you microwave a slice for 30 seconds. It goes like a hot fudge brownie, & have it with a scoop of vanilla ice cream.
