What do the Chinese takeaways put in their egg fried rice to make it so gorgeous?

Lots of oil basically and MSG; the closest MSG 'recipe' I've found is a throwing in a load of tamari soy sauce, sesame seed oil, garlic oil- get the oil very hot before adding in the rice, preferable day old rice, keep it frying up for a while. It's about good enough to kick my takeaway cravings (especially with a Chinese style curry sauce) but seeing how unhealthy it is (all that oil) does spoil the fun Hmm
