Veg box leftovers. Is there anything easy I can make with two sticks of rhubarb??

Cook them down, add pears, ginger and vanilla if you have them

Melt butter in a frying pan add oats and sugar and fry till oats are crispy

Instant rhubarb crumble

Chop up, put in a bottle of gin along with sugar and ginger. Shake regularly. Keep for a month or so. Drink

tempestterra can you eat it baked just as it is? I like rhubarb but the amount of sugar I need to add for a crumble etc always puts me off cooking with it.

Have you got any bramleys? Stewed apple and rhubarb or rhubarb and apple crumble.

Roast it. Gorgeous. Just drizzle a bit of sugar over the top to sweeten. Serve with custard or ice cream or to garnish a compote

Rhubarb chutney. Add some currants, port/wine, brown sugar, vinegar (wine/cider preferred, not malt); low heat until the rhubarb is squidgy. Pop in a spare jar.

Poach gently after chopping up. When cold, stir into beaten cream or a mixture of half beaten cream & half cold custard to make a delicious rhubarb fool. Serve with small biscuits if available.
