What to you put in cous cous?

I'm making a nice dinner next weekend with stuff like lamb koftas, feta, flatbreads and so on. I also have some cous cous (the plain stuff, not the flavoured packet ones).
I know to cook it in stock but what else can I add to it to jazz it up a bit? Thanks.

I soak it in boiling water and add cumin and some stock if I have it, and some salt. Then when it has puffed up I drizzle quite a lot of virgin oil and fluff it with a fork. When it has cooled down a bit I add some finely chopped parsley and coriander (quite a lot so that it all looks quite green) and some little rounds of salad onions. Then depending on what it is accompanying I will add toasted pine nuts or chickpeas. It is delicious and my children (3 boys) wolf it down :-)

I had some for lunch today mixed with the end of a tub of lemon and coriander hummus - rather nice though it could have done with some roasted veg!

Delia uses couscous with oven roasted Mediterranean vegetables. Roast red onion quarters, peppers, aubergines, cherry toms, garlic, courgette drizzled with olive oil (lots of seasoning) in oven, about 25-30 mins. Then mix into couscous. I think it’s in her ‘vegetarian’ cook book. Don’t cut vegesbup too small. They should still be identifiable.

I add stock and plenty of mint sauce to the water. That way you get mint throughout the entire dish, with a sweet vinegary tang, and no chopping involved!

Roasted chickpeas (if you can roast them in a pan previously used for popcorn it can give it a really nice smoky taste), roasted red onion, chopped spring onion, roasted peppers, sometimes roasted garlic. I serve it up with salmon steak.
