Lemon meringue pie

Does anyone have a tried and tested lemon meringue pie recipe that they’d be willing to share?

I loved it as a child but I’ve always thought it would take too long to make. Now that I have some time on my hands I’d like to give it a go.

My DGM used to make an amazing one but I’ve no idea which recipe she used.

My mum's lemon meringue pie is the best ever.
But she uses a recipe from centuries ago that was in the Hamlyn cookbook.
If I can find it, I'll see if I can post a photo

The main recipe

And the pastry bit (ignore the reference to pork)

Lemon Meringue

18cm (7 -8 inch) cooked pastry flan case (make your own or buy)
Filling :
25g butter
3 level tablespoons cornflour
50g sugar
2 egg yolks
Finely grated rind 1 large lemon
plus juice
Make up to 275ml liquid using juice and water

Meringue:
2 egg whites
75g caster sugar

Method
Oven 150°c/ gas 3
Separate eggs v carefully. Whites into a basin
Put butter,sugar,cornflour,liquid and rind in saucepan. Mix briefly.
Stir with wooden spoon on medium heat until boiling and thickened
Take off heat. Cool slightly
Stir in egg yolks.
Pour into flan case.

Whisk egg whites till they stand in peaks.
Add half sugar. Whisk again till stiff.
Add rest of sugar. Whisk again
Pile over lemon mixture,take care to seal the edges.

Put on baking sheet. Middle shelf for
20 -30 mins.

If you want a really dry crumbly Meringue top then turn oven down further and bake longer.

Add another lemon and less water if you want it really lemony.

Tried and very tested Stork recipe book recipe, though I use butter.

Do you mean there is less sugar in my recipe ( than yours)?

DramaAlpaca yes, Delia's, it's a real winner and totally reliable.

I buy ready-made pastry cases (she makes her own).
My tip is to make the 'custard' filling well ahead of doing the meringue topping. Also, walk through the recipe first an make sure you have the right pans/jugs etc to hand to save some awkward juggling later (or maybe that's just me? I rewrote her recipe to help!)
